Lemon and coconut balls

 

Ingredients:

1 cup coconut chips

1/3 cup INCA OrganicsĀ coconut whey protein powder

1/3 cup almond meal

Zest of a whole lemon

Juice of half a lemon

1 tbsp sticky sweetener (honey, rice malt syrup, coconut nectar)

1 tsp melted coconut oil

Method:

Add the coconut chips, almond meal and protein powder into a food processor and blend for 30 seconds. Add the rest of the ingredients and blend for a minute or so until the mixture comes together. Roll tablespoons of the mixture into balls.
